Magic Thai Iced Tea Popsicles


I truly enjoy a good popsicle. I have posted a bunch on the blog and all of them speak to the taste buds of young and old alike. This one however, I have found is for the more mature palette. My kids told me it wasn’t sweet enough, the grown-ups said it was perfect. I have long been a fan of Thai Iced Tea but honestly, the sugar content is quite high, a 16-ounce Thai iced tea can have up to 38 grams of sugar, and a cola can have 44 grams. Yikes. It has been a long while since I have had a traditional Thai iced tea in Thai restaurants. Alas. It was truly one of my favorite beverages. 

My dear friend Zhena, who owns Club Magic Hour, created her Thai Temple Tea and in the winter I drank it piping hot this summer added ice, monk fruit sweetener, and coconut milk or nut milk, and happily was able to reconnect to my beloved beverage. Then came the day, when I thought to myself, sipping said cold drink, on a 94-degree day, “Wouldn’t this be lovely as a popsicle”? And recipe testing was underway. I hope you love it. It’s creamy, sweet, and has all the flavor of Thai iced tea but dairy-free and sugar-free. Be aware though, it does have a touch of caffeine in Zhena’s magic tea blend. Check out all her other teas. Gather

1 cup/237 ml water

2 tablespoons Club Magic Hour Thai Temple Tea

2 pinches ground white pepper

6 cardamom seeds

1/2 teaspoon anise seeds

1/4 cup Monk fruit sweetener

2 tablespoons coconut sugar

1/2 teaspoon vanilla extract

1 can 13.5 ounce/398ml coconut milk

3/4 cup/175 ml coconut cream



Make

Brew the tea and water in a cup for 10 minutes. Transfer to a small pot and add the white pepper, cardamom seeds, and anise seeds. Bring to a boil, then lower the flame and simmer for 10 minutes. Strain the liquid, bring it back to the pot and add the monk fruit sweetener and coconut sugar while still warm. Add the vanilla, coconut milk, and coconut sugar and stir well. Bring to room temperature for about 5-10 minutes, Strain and then pour into desired popsicle molds and freeze overnight.
